Ingredients

12 oz penne pasta (or your choice of pasta)

2 cups heavy cream

1 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

1 cup diced roasted Hatch chiles (can use fresh or canned)

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust to your spice preference)

2 tablespoons olive oil

Fresh cilantro or parsley, chopped (for garnish)

1/2 cup bread crumbs (for crunchy topping)

Optional: 1 cup cooked chicken or shrimp (for added protein)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) so it's ready for baking.

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until it reaches an al dente texture. Drain the pasta and set it aside.

Prepare the Alfredo Sauce: In a medium saucepan over medium heat, pour in the olive oil. Once the oil is shimmering, add the minced garlic and sauté for about 1 minute until it's fragrant but not browned. Pour the heavy cream into the saucepan, bringing it to a gentle simmer. Gradually add the grated Parmesan cheese, stirring constantly until it's fully melted and the sauce is creamy and smooth.

Combine the Ingredients: In a large mixing bowl, combine the cooked pasta, diced roasted Hatch chiles, onion powder, garlic powder, smoked paprika, salt, black pepper, and cayenne pepper. Pour the prepared Alfredo sauce over the pasta mixture, mixing thoroughly to ensure everything is evenly coated. If using, gently fold in the cooked chicken or shrimp for a protein boost.

Transfer to Baking Dish: Take a greased or buttered 9x13 inch baking dish and pour the pasta mixture into it, spreading it evenly.

Add the Toppings: Evenly sprinkle the shredded mozzarella cheese over the top of the pasta, then add the bread crumbs for a deliciously crunchy finish.

Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and turns a beautiful golden brown on top.

Garnish and Serve: After baking, remove the dish from the oven and allow it to sit for a few minutes. Garnish generously with freshly chopped cilantro or parsley before serving.

                  Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 8

                    - Presentation Tips: Serve directly from the baking dish or portion it onto individual plates. A sprinkle of additional fresh herbs on top can enhance the presentation beautifully, alongside a fresh green salad for a complete meal.
