Ingredients

1 ripe avocado, peeled and pitted

1/2 cup unsweetened cocoa powder

1/4 cup pure maple syrup (or honey/agave for sweetness)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup dark chocolate chips (dairy-free if desired)

Optional toppings: shredded coconut, chopped nuts, cacao nibs, or cocoa powder

Instructions

Prep the Avocado: In a medium-sized mixing bowl, mash the ripe avocado using a fork or a hand mixer until it reaches a smooth and creamy consistency. Make sure to eliminate any lumps for a silky texture.

Combine Ingredients: Add the unsweetened cocoa powder, maple syrup, vanilla extract, and sea salt to the mashed avocado. Use a spatula or mixer to blend until all the ingredients are fully combined, resulting in a smooth and glossy mixture.

Melt the Chocolate: In a microwave-safe bowl, add the dark chocolate chips. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth. Alternatively, for more control, melt the chocolate using a double boiler method.

Mix in Chocolate: Allow the melted chocolate to cool slightly, about one minute, before pouring it into the avocado mixture. Stir thoroughly until the chocolate is evenly distributed throughout the mix.

Chill the Mixture: Cover the mixing bowl with plastic wrap or a lid and refrigerate the mixture for about 30 minutes. This chilling step will help firm it up, making it easier to form into truffles.

Form the Truffles: After chilling, take a small cookie scoop or your hands to portion out the mixture. Roll each portion into a ball, approximately 1 inch in diameter.

Coat the Truffles: Choose your desired toppings and roll each truffle in them. Options include shredded coconut, chopped nuts, cacao nibs, or simply dusting them with cocoa powder. Ensure that each truffle is well coated for added flavor and texture.

Set & Store: Arrange the coated truffles on a parchment-lined tray. Place the tray back in the refrigerator for an additional 15-20 minutes to allow the truffles to set.

Serve: Enjoy your delightful guilt-free truffles immediately, or store them in an airtight container in the refrigerator for up to a week, allowing for a sweet, healthy treat whenever you crave.
