Instructions

Marinate the Shrimp:

    - In a medium mixing bowl, whisk together the olive oil, fresh lime juice, minced garlic, chili powder, ground cumin, smoked paprika, sea salt, black pepper, and chopped cilantro until well combined.

      - Add the peeled and deveined shrimp to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to infuse.

        Prepare the Slaw:

          - In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrot, and chopped cilantro. Toss gently to mix.

            - In a separate small bowl, whisk together the Greek yogurt, fresh lime juice, honey, sea salt, and black pepper until smooth. Pour the dressing over the cabbage mixture and toss until everything is well combined. Set aside for about 10-15 minutes to let the flavors meld.

              Grill the Shrimp:

                - Preheat your grill to medium-high heat, making sure the grates are clean and lightly oiled to prevent sticking.

                  - If using bamboo skewers, soak them in water for 30 minutes prior to threading the shrimp to prevent burning. Thread the marinated shrimp onto the skewers, spacing them evenly.

                    - Place the skewers on the grill and cook for about 2-3 minutes per side or until the shrimp turn pink and opaque. Remove from the grill and set aside.

                      Warm the Tortillas:

                        - Warm the tortillas by placing them directly on the grill for 20-30 seconds on each side, or until they are golden and slightly charred. Alternatively, you can heat them in a skillet over medium heat or microwave them for about 15-20 seconds.

                          Assemble the Tacos:

                            - Take each warm tortilla and place 4-5 grilled shrimp on top. Generously spoon the prepared slaw over the shrimp and garnish with additional fresh cilantro.

                              - Serve immediately with lime wedges on the side to allow guests to squeeze fresh lime juice over their tacos for an extra burst of flavor.
