Grilled Romaine with Lemon Caesar Dressing

2 heads of romaine lettuce

2 tablespoons extra virgin olive oil

Salt and freshly cracked black pepper to taste

½ cup freshly grated Parmesan cheese

1 cup croutons (store-bought or homemade)

Lemon wedges for garnish

For the Lemon Caesar Dressing:

1 clove garlic, finely minced

2 tablespoons freshly squeezed lemon juice

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1 large egg yolk (or substitute with 1 tablespoon mayonnaise for an egg-free version)

½ cup extra virgin olive oil

Salt and freshly ground black pepper to taste

Prepare the Dressing:

    In a medium mixing bowl, combine the minced garlic, freshly squeezed lemon juice, Dijon mustard, Worcestershire sauce, and egg yolk. Whisk together until the mixture is smooth and well combined. Gradually pour in the extra virgin olive oil while whisking continuously to emulsify the dressing. Once combined, season with salt and freshly cracked black pepper according to your taste. Set the dressing aside to let the flavors meld.

      Prep the Romaine:

        Preheat your grill to a medium heat setting. While the grill is heating, rinse each romaine head under cold running water to remove any dirt or debris. Cut each head in half lengthwise and gently pat them dry with a paper towel to remove excess moisture.

          Season the Lettuce:

            Brush the cut sides of each romaine half generously with extra virgin olive oil. Sprinkle a good pinch of salt and freshly cracked black pepper over the oiled surfaces to enhance the flavor.

              Grill the Romaine:

                Once the grill is hot, place the romaine halves cut-side down on the grill grates.
