Grilled Pineapple Teriyaki Burgers

1 lb ground beef or turkey

1/2 cup breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

1/4 cup teriyaki sauce, plus extra for glazing

1 teaspoon sesame oil

Salt and freshly cracked pepper, to taste

4 slices of fresh pineapple

4 burger buns (preferably brioche or whole grain)

4 slices of Swiss or provolone cheese (optional)

Fresh lettuce leaves, for serving

Sliced tomatoes, for serving

Toasted sesame seeds, for garnish

Instructions
 

Prepare the Patties: In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, chopped green onions, minced garlic, minced ginger, soy sauce, teriyaki sauce, sesame oil, and a pinch of salt and pepper. Mix everything together gently until just combined; be careful not to overmix, as this can make the burgers tough. Divide the mixture into 4 equal portions and shape each portion into a patty about 1 inch thick.

    Preheat the Grill: Preheat your grill to medium-high heat. If you are using a grill pan, place it on the stovetop over medium-high heat and lightly grease it with cooking spray or a brush of oil to prevent sticking.

      Grill the Pineapple: Lightly brush each slice of fresh pineapple with a bit of teriyaki sauce. Place the pineapple slices directly on the grill grate, cooking for approximately 3-4 minutes on each side, or until grill marks form and the pineapple caramelizes slightly. Once grilled, remove the pineapple from the grill and set aside.

        Grill the Patties: Place the formed burger patties on the hot grill. Cook for about 4-5 minutes without moving them to develop a nice sear on one side. Flip the patties gently. If desired, add a slice of cheese on top of each patty after flipping. Cook for an additional 4-5 minutes, or until the internal temperature reaches 160°F for beef or 165°F for turkey, ensuring they are cooked through.

          Toast the Buns: In the last few minutes of cooking, place the burger buns cut side down on the grill. Toast for about 1-2 minutes until they are lightly golden and crisp.

            Assemble the Burgers: On the bottom half of each toasted bun, spread a generous layer of extra teriyaki sauce. Place a grilled patty on top, followed by a slice of grilled pineapple, a crisp lettuce leaf, and a few slices of juicy tomato. Cap with the top half of the bun.

              Garnish and Serve: If desired, sprinkle toasted sesame seeds over the top of the burgers for added texture and flavor. Serve immediately with your favorite sides, such as sweet potato fries or a fresh salad.
