Grilled Peach & Arugula Salad

3 ripe peaches, halved and pitted

4 cups fresh arugula

½ cup crumbled goat cheese

¼ cup candied pecans (or walnuts)

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and freshly ground black pepper, to taste

Fresh mint leaves, for garnish (optional)

Preheat the Grill: Begin by preheating your grill to medium-high heat. If you're using a grill pan, place it on the stovetop over medium heat to warm up.

    Prepare the Peaches: Take the halved peaches and lightly brush the cut sides with olive oil. This will help prevent them from sticking to the grill and enhance their flavor.

      Grill the Peaches: Once your grill is hot, place the peach halves cut-side down on the grill. Allow them to grill undisturbed for about 4-5 minutes, or until you see good grill marks and the peaches begin to soften. Carefully flip them over and grill for an additional 2-3 minutes. Once grilled, remove them from the heat and set aside to cool slightly.

        Make the Dressing: In a small mixing bowl, combine the remaining olive oil, balsamic vinegar, honey, and a pinch of salt and pepper. Whisk together until the dressing is well mixed and emulsified.

          Toss the Arugula: In a large salad bowl, place the fresh arugula. Drizzle approximately half of the prepared dressing over the leaves. Gently toss the arugula with your hands to ensure each leaf is evenly coated.
