Ingredients

8 slices sourdough bread

1 cup fig jam (store-bought or homemade)

8 oz creamy goat cheese, softened

4 oz sharp cheddar cheese, shredded

4 oz prosciutto, thinly sliced

4 tbsp unsalted butter, softened

Fresh arugula or spinach (for garnish, optional)

1 tbsp balsamic glaze (for drizzling, optional)

Instructions

Prepare the Bread: Begin by evenly spreading a thin layer of softened butter on one side of each slice of sourdough bread. This will help achieve a beautifully golden and crispy crust.

Assemble the Sandwiches: On the unbuttered side of four slices, generously spread the fig jam. Layer the softened goat cheese evenly on top of the fig jam, followed by a few slices of prosciutto. Finally, sprinkle the shredded sharp cheddar cheese over the top for an extra layer of flavor.

Top and Close: Take the remaining four slices of bread and place them butter-side up on top of the assembled ingredients to form a sandwich. Press down gently to secure the layers.

Heat the Grill: Preheat a non-stick skillet or griddle over medium heat. Make sure the pan is hot enough to create a nice sear but not so hot that it burns the bread.

Grill the Sandwiches: Carefully transfer the assembled sandwiches to the skillet. Grill each side for about 3-4 minutes, or until the bread is golden brown and the cheeses are melty. If needed, press down gently with a spatula for even grilling.

Serve: Once grilled to perfection, remove the sandwiches from the skillet and let them rest for a minute. This helps the cheese set a little, making it easier to cut. Slice each sandwich in half for easy handling. Optionally, garnish with fresh arugula or spinach and drizzle with balsamic glaze for an elegant touch.

Enjoy: Serve warm and relish the delightful contrasting flavors of the sweet fig, creamy cheeses, and savory prosciutto in every bite!
