2 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced into wedges

4 cups mixed greens (such as spinach, arugula, or a spring mix)

1/4 cup feta cheese, crumbled

1/4 cup pecans, toasted for added crunch

1/4 red onion, thinly sliced

1 tablespoon extra-virgin olive oil

1 tablespoon balsamic vinegar

Salt and fresh ground pepper to taste

Prepare the Chicken: Season the chicken breasts generously with salt, freshly ground pepper, and a light drizzle of olive oil. Allow the chicken to marinate for at least 15 minutes to absorb the flavors, while you prepare the other ingredients.

    Grill the Chicken: Preheat your grill to medium-high heat (about 375°F to 450°F or 190°C to 232°C). Once hot, place the marinated chicken breasts on the grill and cook for approximately 6-7 minutes on each side, ensuring they reach an internal temperature of 165°F (75°C). After grilling, remove the chicken from the heat and let it rest for 5 minutes before slicing into strips.

      Toast the Pecans: In a small skillet over medium heat, add the pecans and toast them for about 3-5 minutes, stirring frequently until they are golden brown and aromatic. Remove from heat and set aside to cool.

        Prepare the Dressing: In a small bowl, combine the olive oil and balsamic vinegar. Season with a pinch of salt and fresh ground pepper. Whisk until well combined, adjusting the seasoning to your personal taste.

          Assemble the Salad: In a large bowl, combine the mixed greens, sliced peaches, thinly sliced red onion, and crumbled feta cheese. Drizzle the prepared dressing over the ingredients and gently toss everything together until evenly coated.

            Add the Chicken: Slice the grilled chicken into strips and arrange them on top of the salad. Sprinkle the toasted pecans over the dish, and for an added touch of freshness, garnish with optional basil leaves.
