2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

1 ripe mango, diced

1/2 red onion, finely chopped

1/2 red bell pepper, diced

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

4 large tortillas (choose between flour or spinach)

1 cup mixed greens (spinach, arugula, or lettuce)

Optional: sour cream or Greek yogurt for added creaminess

Marinate the Chicken: In a medium bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, lime juice, salt, and pepper until well combined. Add the chicken breasts, ensuring they are completely coated in the marinade. Cover and let them marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for deeper flavor absorption.

    Prepare the Mango Salsa: In a separate bowl, combine the diced mango, chopped red onion, diced red bell pepper, minced jalapeño, chopped cilantro, lime juice, and a pinch of salt. Gently stir to combine. Taste the salsa and adjust seasoning as needed. Allow it to sit for a few minutes to let the flavors develop while the chicken is grilling.
