Ingredients

2 boneless, skinless chicken breasts

1 cup fresh mozzarella cheese, sliced into thick rounds

1 large ripe tomato, sliced into thick rounds

1/2 cup fresh basil leaves, washed and dried

1/4 cup balsamic glaze, for drizzling

4 ciabatta rolls (or your preferred sandwich bread)

2 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper, to taste

Optional: Fresh arugula for a peppery crunch

Instructions

Marinate the Chicken: In a mixing bowl, whisk together 2 tablespoons of extra-virgin olive oil, a generous pinch of salt, and freshly ground black pepper. Add the chicken breasts to the bowl and ensure they are well-coated in the marinade. Cover with plastic wrap and let marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for enhanced flavor.

Preheat the Grill: Preheat your grill or grill pan to a medium-high heat. This will ensure a nice sear on the chicken.

Grill the Chicken: Once the grill is hot, place the marinated chicken breasts on it. Cook for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C) and have developed appetizing grill marks. After grilling, remove the chicken from the grill and allow it to rest for about 5 minutes to retain its juices.

Prepare the Ciabatta Rolls: While the chicken is resting, slice the ciabatta rolls in half. Place them cut side down on the grill for a couple of minutes until they are toasted to a golden brown. This adds a delightful crunch to the sandwich.

Assemble the Sandwich: On the bottom half of each toasted ciabatta roll, place a grilled chicken breast. Layer generously with slices of fresh mozzarella and tomato, adding fresh basil leaves for an aromatic touch. Drizzle balsamic glaze over the top for a burst of sweetness and acidity.

Optional Arugula: For added flavor and texture, pile a handful of fresh arugula on top of the layered ingredients before closing the sandwich.

Finish and Serve: Gently place the top half of the ciabatta roll over the assembled sandwich. Press down slightly to compact the contents, then slice the sandwich in half diagonally for easier handling. Serve immediately while still warm, with additional balsamic glaze on the side for dipping.

                  - Presentation Tips: Serve the sandwiches on a wooden cutting board or a large platter. Garnish with a few extra basil leaves for a pop of color and serve with a small bowl of balsamic glaze for dipping.
