8 oz (225g) pasta (penne or fusilli recommended)

2 boneless, skinless chicken breasts

2 tablespoons olive oil, divided

Salt and pepper, to taste

2 cloves garlic, minced

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/3 cup fresh basil leaves, chopped

1 tablespoon balsamic glaze

Grated Parmesan cheese, for serving

Cook the Pasta: In a large pot, bring salted water to a vigorous boil. Add the pasta and cook following the package instructions until al dente, usually about 8-10 minutes. Drain the pasta, reserving about half a cup of the pasta water, and set aside.
