Ingredients

For the Chicken Filling:

1 pound boneless, skinless chicken breasts

1 cup green chili sauce (store-bought or homemade)

1 cup diced onion

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

For the Tostada Cups:

10 small corn tortillas

About 1 cup oil for frying

Salt, to taste

For the Toppings:

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup crumbled feta cheese (or cotija cheese)

1/4 cup chopped fresh cilantro

Lime wedges, for serving

Sliced jalapeños (optional, for an extra kick)

Instructions

Cook the Chicken: In a medium pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes. Introduce the chicken breasts, ground cumin, smoked paprika, and a sprinkle of salt and pepper. Pour in the green chili sauce, stirring to combine, then bring the mixture to a gentle simmer. Cover the pot and cook for 20-25 minutes, or until the chicken is cooked through and tender.

Shred the Chicken: Once the chicken is thoroughly cooked, remove it from the pot and allow it to cool for a few minutes. Using two forks, shred the chicken into bite-sized pieces and return it to the pot with the sauce. Stir the shredded chicken to coat it evenly in the sauce, and taste to adjust seasoning if needed. Keep the chicken filling warm on low heat.

Prepare the Tostada Cups: In a deep frying pan, heat enough oil over medium-high heat until it reaches approximately 350°F (175°C). Carefully fry each corn tortilla, one at a time, for about 1-2 minutes or until they turn golden brown and crispy. To shape them into cups, gently press the tortilla against the sides of the pan as it fries. Once cooked, remove them and drain on paper towels, sprinkling lightly with salt while they are still hot.

Assemble the Tostada Cups: After the tostada cups have cooled slightly, fill each one generously with the warm shredded chicken mixture. Top them off with a layer of shredded lettuce, diced tomatoes, crumbled feta cheese, and fresh cilantro for added flavor and color.

Serve: Arrange the assembled tostada cups on a large serving platter. Serve immediately with lime wedges on the side for squeezing over the top, and offer sliced jalapeños for those who enjoy an extra spicy kick.
