Greek yogurt serves as the foundation for these Berry Bliss pops, and its benefits go beyond just taste. Unlike regular yogurt, Greek yogurt undergoes a straining process that removes much of its liquid whey, resulting in a thicker, creamier texture. This process not only gives Greek yogurt its unique consistency but also concentrates its nutritional value.

Ingredients

2 cups Greek yogurt (choose plain for a tangy flavor or vanilla for sweetness)

1 cup mixed berries (strawberries, blueberries, raspberries; ensure strawberries are chopped)

2 tablespoons honey or maple syrup (taste and adjust based on your sweetness preference)

1 teaspoon vanilla extract

Optional: 1 tablespoon chia seeds (for added nutrition and texture)

Optional: Fresh mint leaves (for a beautiful garnish)

Instructions

In a large mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Using a whisk or spatula, stir the mixture thoroughly until it is smooth and all ingredients are well blended.

Gently fold in the mixed berries using a spatula. Ensure that the berries are evenly distributed throughout the yogurt mixture. If you’re using chia seeds, now is the time to mix them in for an extra healthy boost.

Carefully spoon the yogurt and berry mixture into popsicle molds, filling each one while leaving about a quarter-inch of space at the top to allow for expansion during freezing.

Insert the popsicle sticks into the molds, making sure they are centered and standing upright.

Place the filled molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until they have achieved a solid state.

When it’s time to enjoy your pops, remove them from the molds by briefly running the bottom of the molds under warm water; this will help to loosen them for easier removal.

Serve the pops immediately, garnished with fresh mint leaves for an added touch of color and flavor. Enjoy your cool and refreshing Berry Bliss Greek Yogurt Pops!
