Greek Yogurt Berry Pops

2 cups Greek yogurt (plain or flavored)

1 cup mixed fresh berries (strawberries, blueberries, raspberries, blackberries)

2 tablespoons honey or maple syrup (to taste)

1 teaspoon vanilla extract

Optional: fresh mint leaves for garnish

Prepare the Berries: Start by washing the berries thoroughly. If using whole strawberries, hull them (remove the green tops) and slice them into smaller pieces. Leave the raspberries and blueberries whole for texture and color.

    Mix the Yogurt: In a medium-sized mixing bowl, add the Greek yogurt, honey (or maple syrup), and vanilla extract. Using a whisk or spatula, mix the ingredients together until they are well combined and smooth. Taste the mixture and adjust the sweetness by adding more honey or maple syrup if desired.

      Layer the Pops: Take your popsicle molds and begin the layering process. Spoon a small amount of the yogurt mixture into the bottom of each mold, followed by a layer of mixed berries. Repeat this process, alternating between the yogurt mixture and berries, until the molds are filled just below the rim (leave some space for expansion during freezing).

        Insert Sticks: After filling the molds, carefully insert a popsicle stick into the center of each mold. If you don’t have popsicle sticks, you can cover the molds with aluminum foil and poke the sticks through the foil, securing them in place.

          Freeze: Place the filled molds upright in the freezer and allow them to freeze for at least 4 to 6 hours, or until the popsicles are completely firm and frozen solid.

            Unmold and Serve: To release the popsicles from the molds, run warm water over the outside of each mold for a few seconds until they loosen up. Gently pull the pops out of the molds.

              Enjoy: Serve the popsicles immediately for a refreshing treat. If desired, garnish with fresh mint leaves to add a pop of color and a burst of flavor.
