2 cups penne pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon extra virgin olive oil

1 large onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup Kalamata olives, pitted and sliced

1 cup fresh baby spinach leaves

1 ½ cups feta cheese, crumbled

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and freshly ground black pepper, to taste

2 cups marinara sauce (store-bought or homemade)

1 cup mozzarella cheese, shredded

Fresh parsley leaves, chopped for garnish

Instructions
 

Preheat the oven: Begin by preheating your oven to 375°F (190°C).

    Cook the pasta: In a large pot, bring a generous amount of salted water to a rapid boil. Add the penne pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside.

      Sauté the chicken: Heat the extra virgin olive oil in a large skillet over medium heat. Add the diced chicken pieces to the skillet and season generously with salt and pepper. Sauté the chicken for about 5-7 minutes, stirring occasionally, until it is golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

        Sauté the vegetables: In the same skillet, add the finely chopped onion and minced garlic. Sauté for about 3-5 minutes, or until the onion becomes translucent and fragrant. Add the halved cherry tomatoes to the skillet and cook for an additional 2 minutes, allowing them to soften slightly.

          Combine the ingredients: Return the cooked chicken to the skillet. Then stir in the sliced Kalamata olives, fresh baby spinach, dried oregano, and dried basil. Continue to cook for about 2 minutes, or until the spinach is wilted and bright green.

            Mix in sauce and pasta: Pour in the marinara sauce and add the cooked penne pasta to the skillet. Gently mix everything together, ensuring that the pasta is thoroughly coated in the sauce. Fold in the crumbled feta cheese, incorporating it evenly throughout the mixture.

              Transfer to a baking dish: Lightly grease a 9x13 inch baking dish. Pour the chicken and pasta mixture into the baking dish, spreading it out evenly.
