3 tablespoons extra virgin olive oil

½ cup freshly grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will help ensure that the carrots become beautifully crispy as they roast.

    Prepare the Carrots: If you’re using regular carrots, wash and peel them, then cut them into sticks approximately 4-5 inches long. For baby carrots, feel free to use them whole for an easier prep.

      Mix the Seasoning: In a large mixing bowl, combine the extra virgin olive oil, minced garlic, sea salt, freshly ground black pepper, and smoked paprika. Whisk these ingredients together until they’re thoroughly blended and fragrant.

        Coat the Carrots: Add the prepared carrots into the bowl with the seasoning mixture. Gently toss them with your hands or a spatula until each carrot is well-coated in the oil and spices.

          Arrange on Baking Sheet: Line a baking sheet with parchment paper to prevent sticking and arrange the coated carrots in a single layer across the sheet. Ensure that they have a bit of space between them to allow for even roasting.
