1.5 lbs flank steak, trimmed and cut into 1-inch bite-sized pieces

1.5 lbs baby potatoes, halved

4 tablespoons unsalted butter, melted

6 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 teaspoons paprika

1 teaspoon fine sea salt

1/2 teaspoon freshly ground black pepper

1 tablespoon extra virgin olive oil

Optional: Fresh parsley, chopped, for garnish; lemon wedges for serving

Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure even cooking.

    Prepare the Marinade: In a large mixing bowl, combine the melted butter, minced garlic, chopped rosemary, chopped thyme, paprika, salt, and black pepper. Use a whisk or a fork to mix thoroughly until well blended.

      Marinate the Steak: Add the bite-sized pieces of flank steak into the marinade mixture. Toss the steak pieces until they are fully coated in the flavorful marinade. Let the steak marinate for a minimum of 15 minutes to absorb the flavors while you prepare the potatoes.

        Prepare the Potatoes: In a separate bowl, add the halved baby potatoes. Drizzle with olive oil and sprinkle with a pinch of salt and black pepper. Toss the potatoes to ensure they are evenly coated in oil and seasoning.
