2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon pure vanilla extract

1/4 teaspoon salt

1 cup mixed berries (such as blueberries, raspberries, strawberries, and sliced bananas)

1 tablespoon fresh lemon juice

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Yogurt Mixture: In a large mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), pure vanilla extract, and salt. Using a whisk, blend the ingredients together until the mixture is smooth and creamy, ensuring there are no lumps.

    Prepare the Berries: In a separate medium bowl, add the mixed berries. Drizzle with fresh lemon juice and gently toss the berries to coat them evenly without crushing them.

      Form the Yogurt Coins: Line a baking sheet with parchment paper to prevent sticking. Using a round cookie cutter, or just a spoon, drop about 2 tablespoons of the yogurt mixture onto the prepared parchment, spacing them evenly apart. Top each yogurt dollop with a few pieces of the mixed berries, pressing them gently into the yogurt.

        Freeze the Coins: Continue this process until all the yogurt mixture and berries are used. Carefully transfer the baking sheet to the freezer and allow the yogurt coins to freeze for a minimum of 2-3 hours, or until they are completely solid.
