Ingredients

2 cups Greek yogurt (plain or vanilla)

1 ripe banana, perfectly mashed until smooth

1 cup fresh strawberries, hulled and finely chopped

1 cup fresh kiwi, peeled and diced into small pieces

2-3 tablespoons honey or maple syrup (adjust based on your desired level of sweetness)

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh mint leaves for a refreshing garnish

Instructions

Prepare the Fruit: Rinse the strawberries and kiwi under cool water. Hull the strawberries and chop them into small pieces. For the kiwi, carefully peel the skin and dice it into bite-sized cubes. Set both fruits aside in separate bowls.

Make the Yogurt Mixture: In a large mixing bowl, add the Greek yogurt and the mashed banana. Drizzle in the honey (or maple syrup), pour in the vanilla extract, and sprinkle in a pinch of salt. Using a whisk or spatula, mix these ingredients together until you achieve a smooth and creamy consistency that is well combined.

Layer the Pops: Grab your popsicle molds and begin by spooning in a generous layer of the yogurt mixture, filling them up about one-third of the way. Next, layer on some of the chopped strawberries followed by a layer of diced kiwi. Repeat this layering process until you reach the top of each mold, leaving a little space at the top to allow for expansion during freezing.

Insert Sticks: After filling the molds, gently insert popsicle sticks into the mixture. If the yogurt mix is too thick to keep the sticks upright, freeze the molds for about 30 minutes until the mixture firms up slightly before inserting the sticks.

Freeze: Carefully place the filled molds into the freezer. Allow them to freeze for a minimum of 4 to 6 hours, or until they are completely solid and firm to the touch.

Unmold and Serve: To remove the pops from the molds, run the outside of the molds under warm water for a few seconds to loosen them. Gently tug on the popsicle sticks to extract the popsicles. For an extra touch, garnish with fresh mint leaves just before serving.

Enjoy: Delight in these refreshing fruity treats on a sunny day or whenever you need a cheerful and invigorating snack!
