Ingredients

1 cup graham cracker crumbs

1/2 cup all-purpose flour

1/4 cup granulated sugar

1/4 cup packed brown sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened to room temperature

1 large egg

1 teaspoon vanilla extract

1 cup mini marshmallows

1 cup chocolate chips

2 cups vanilla frozen yogurt

Chocolate syrup for drizzling (optional)

Additional graham cracker crumbs for topping (optional)

Instructions

Prepare the Pan:

Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, ensuring there’s some overhang for easy lifting later.

      Make the Cookie Base:

In a large mixing bowl, combine the graham cracker crumbs, flour, granulated sugar, brown sugar, baking powder, and salt. Stir together until fully combined and there are no clumps.

          Add Wet Ingredients:

In a separate bowl, beat together the softened butter, egg, and vanilla extract until the mixture is creamy and smooth. Gradually add this wet mixture to the dry ingredients, mixing until a thick dough forms.

              Layer the Ingredients:

Press half of the cookie dough evenly into the bottom of the prepared baking pan, forming a solid base. Evenly distribute the mini marshmallows and chocolate chips on top of the dough. Take the remaining cookie dough and dollop it over the marshmallows and chocolate, then gently spread it out to cover as much of the filling as possible.

                  Bake the Cookie Base:

Place the pan in the preheated oven and bake for 20-25 minutes. You’ll know it’s ready when the edges are lightly golden and the center appears set. Once baked, transfer the pan to a wire rack and let it cool completely.

                      Add Frozen Yogurt Layer:

Once the cookie base has cooled completely, gently spread the vanilla frozen yogurt on top, smoothing it out evenly with a spatula for a nice, flat layer.

                          Freeze:

Cover the pan tightly with plastic wrap or aluminum foil and place it in the freezer. Let it freeze for at least 3-4 hours, or until the yogurt layer is firm to the touch.

                              Serve:

After freezing, carefully remove the dessert from the pan by pulling on the parchment paper overhang. Cut into squares for serving. Optionally, you can drizzle chocolate syrup over the top and sprinkle additional graham cracker crumbs before serving.

                                  Enjoy:

These Frozen Yogurt S’mores Cookie Squares are best enjoyed fresh. If you have leftovers, keep them stored in an airtight container in the freezer.
