Ingredients

2 cups plain Greek yogurt

1/2 cup creamy peanut butter

2 tablespoons honey (or substitute with maple syrup for a vegan option)

2 ripe bananas, sliced into rounds

1/4 cup dark chocolate chips (or dairy-free chocolate if preferred)

1/4 cup chopped nuts (such as almonds, walnuts, or peanuts)

1 tablespoon chia seeds (optional, for added nutrition)

Pinch of sea salt

Instructions

Line the Pan: Begin by preparing a baking sheet by lining it with parchment paper. This step is crucial to ensure the yogurt bark doesn’t stick once frozen. A baking sheet measuring approximately 10x15 inches is ideal, but you may adjust the size according to how thick you want your bark.

Mix the Yogurt Base: In a large mixing bowl, combine the plain Greek yogurt, creamy peanut butter, honey (or maple syrup), and a pinch of sea salt. Use a whisk to mix until the blend is thoroughly smooth, ensuring all ingredients are well incorporated.

Spread the Mixture: Carefully pour the yogurt mixture onto the lined baking sheet. With the help of a spatula, spread the mixture evenly across the sheet to your desired thickness, aiming for around 1/2 inch for the best texture.

Add Toppings: Lay the banana slices evenly across the yogurt layer. Next, sprinkle the dark chocolate chips and chopped nuts over the top. If you’re using chia seeds, add them at this point as well. Gently press down on the toppings to ensure they adhere to the yogurt base.

Freeze the Bark: Transfer the baking sheet to the freezer and allow the bark to freeze for a minimum of 4-6 hours, or until it is completely solid throughout.

Break Into Pieces: Once fully frozen, remove the baking sheet from the freezer. Carefully peel away the parchment paper from the bark and break the frozen treat into pieces of your desired size.

Serve and Enjoy: The yogurt bark can be enjoyed immediately or stored in an airtight container in the freezer for up to 2 weeks. To prevent sticking, place parchment paper between the layers of bark pieces in the container.

Prep Time, Total Time, Servings: 15 min | 4-6 hours (freezing) | 12-16 pieces

Presentation Tips: For a fun serving option, pair the yogurt bark pieces in a small decorative dish and garnish with extra banana slices or a drizzle of additional peanut butter for a delightful treat!
