Ingredients

2 cups plain Greek yogurt

1/4 cup honey, plus extra for drizzling

1 teaspoon vanilla extract

1/2 cup granola (preferably with a mix of nuts and dried fruits)

1/2 cup mixed berries (such as strawberries, blueberries, and raspberries)

12 whole grain cookies (oatmeal, graham crackers, or similar)

A pinch of sea salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Yogurt Mixture: In a medium-sized mixing bowl, whisk together the plain Greek yogurt, honey, vanilla extract, and a pinch of sea salt until the mixture is smooth and creamy.

Incorporate the Flavor: Gently fold in the mixed berries and half of the granola into the yogurt mixture, being careful to preserve the shape of the berries while ensuring they are evenly distributed throughout the yogurt.

Assemble the Sandwiches: Arrange 6 whole grain cookies on a clean surface or platter. Spoon a generous portion of the yogurt mixture atop each cookie, spreading it out evenly. Place a second cookie on top of the yogurt to create a delicious sandwich.

Freeze for a Firm Texture: Carefully transfer the assembled sandwiches to a baking sheet lined with parchment paper. Place them in the freezer and allow them to freeze for at least 2 to 3 hours or until they are completely firm.

Finish with a Drizzle: After freezing, remove the sandwiches from the freezer. If desired, cut each sandwich in half for easier handling. Drizzle the tops with additional honey and sprinkle the remaining granola over them for added crunch.

Serve with a Touch of Freshness: If you wish, garnish each sandwich with fresh mint leaves for an added pop of color and flavor. Serve immediately or store in the freezer until you’re ready to enjoy!

Prep Time: 15 minutes | Total Time: 3 hours 15 minutes | Servings: 6 sandwiches

Presentation Tips: For an attractive presentation, arrange the sandwiches on a decorative platter, and consider adding a small bowl of mixed berries on the side for extra flair. Enjoy this refreshing treat on a warm day!
