1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup

1/2 cup almond butter (or any nut butter of your choice)

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup mini dark chocolate chips

1/4 cup chopped nuts (optional, such as walnuts or almonds)

Extra mini chocolate chips for topping (optional)

Prepare the Baking Dish: Begin by lining an 8x8 inch baking dish (or similar size) with parchment paper. Make sure to leave a bit of overhang on the sides. This will make it easy to lift the bars out once they are set.

    Mix the Base Ingredients: In a spacious mixing bowl, combine the rolled oats, Greek yogurt, honey or maple syrup, almond butter, vanilla extract, and salt. Using a sturdy spoon or spatula, mix thoroughly until all ingredients are well integrated into a thick, sticky mixture.

      Incorporate Chocolate Chips and Nuts: Gently fold in the mini dark chocolate chips and the chopped nuts, if you’re using them. Be careful to mix without breaking up the chocolate chips, ensuring they are evenly spread throughout the mixture.

        Transfer the Mixture: Pour the combined mixture into your prepared baking dish. Using a spatula, spread it out evenly, pressing firmly to compact the mixture. This helps the bars maintain their shape once they are frozen.

          Add Optional Topping: For an extra chocolatey finish, sprinkle some additional mini chocolate chips on top of the mixture before freezing.

            Freeze the Mixture: Cover the baking dish tightly with plastic wrap or aluminum foil. Place it in the freezer for at least 2 to 3 hours, or until the mixture is completely frozen solid.
