1 cup plain Greek yogurt, for creaminess

¼ teaspoon ground nutmeg, for depth

A pinch of salt, to balance flavors

½ cup rolled oats, for texture

½ cup finely chopped walnuts or pecans (optional), for crunch

½ cup raisins or dried cranberries (optional), for sweetness

1 cup cream cheese, softened (optional, for frosting)

Instructions
 

Prepare the Carrots: Peel and finely grate the carrots using a box grater or a food processor for a quicker process. Aim for small, even pieces for the best texture.

    Mix Ingredients: In a large mixing bowl, combine the grated carrots, Greek yogurt, honey or maple syrup, and vanilla extract. Use a sturdy spatula or wooden spoon to mix until the wet ingredients envelop the carrot mixture completely.

      Incorporate Spices and Oats: Add in the ground cinnamon, ground nutmeg, pinch of salt, rolled oats, and any optional nuts or dried fruits you choose to include. Stir thoroughly until all ingredients are well combined. The mixture should be thick yet moist.

        Form the Drops: Using a tablespoon or a small cookie scoop, portion out spoonfuls of the mixture onto a parchment-lined baking sheet, spacing the drops about 2 inches apart. Lightly press each scoop to flatten it slightly for even freezing.
