Frozen Yogurt Blueberry Chia Muffin Bars

1 ½ cups whole wheat flour

½ cup rolled oats

1 cup plain or vanilla Greek yogurt

½ cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

½ cup unsweetened almond milk

1 tablespoon chia seeds

1 ½ cups fresh blueberries (frozen blueberries can be substituted if fresh are not available)

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ teaspoon ground cinnamon (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by lining it with parchment paper; leave some paper hanging over the edges for easy removal of the bars after baking.

    Mix Wet Ingredients: In a large mixing bowl, whisk together the Greek yogurt, honey or maple syrup, egg, vanilla extract, and almond milk. Mix until the mixture is smooth and uniform in consistency.

      Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, salt, chia seeds, and ground cinnamon (if using). Ensure all dry ingredients are well integrated.

        Combine Both Mixtures: Gradually add the dry ingredient mixture to the bowl with the wet ingredients. Stir gently until just combined to avoid overmixing, which will help keep your bars light and fluffy.

          Add Blueberries: Carefully fold in the blueberries, ensuring they remain whole and intact for bursts of flavor in every bite.

            Prepare for Baking: Pour the prepared batter into the lined baking dish. Using a spatula, spread the batter evenly across the dish for uniform baking.
