2 cups Greek yogurt (you may choose plain or vanilla based on your preference)

1 cup fresh raspberries (plus a handful extra for garnish)

Zest of 1 lemon (for a bright flavor)

Juice of 1 lemon (approximately 2-3 tablespoons)

2-3 tablespoons honey or maple syrup (adjust according to your desired sweetness level)

A pinch of salt (to enhance flavors)

Prepare the Mixture: In a medium mixing bowl, combine the Greek yogurt, lemon zest, lemon juice, honey (or maple syrup), and a pinch of salt. Use a whisk or spatula to mix thoroughly until the mixture is creamy and smooth. Taste the mixture and adjust the sweetness if needed, adding more honey or syrup if desired.

    Add Raspberries: Carefully fold in the fresh raspberries using a spatula. Be gentle to maintain the integrity of the berries so that some stay intact, adding texture and visual appeal to your finished bites.

      Fill the Molds: Use a spoon to fill silicone ice cube trays or small silicone muffin molds with the yogurt mixture. Make sure to fill each cavity about three-quarters full, which allows for a small amount of expansion as the mixture freezes.

        Freeze: Place the filled molds in the freezer and allow them to freeze for about 4 to 6 hours, or until they are completely solid.

          Unmold and Serve: Once frozen, gently remove the yogurt bites from the molds. If you find them difficult to release, run warm water over the outside of the molds for a few seconds to help loosen them. After removal, transfer the yogurt bites into a freezer-safe container for storage.
