1 cup coconut yogurt (dairy-free option available)

1/2 cup coconut milk (canned for richness, or carton for a lighter option)

2 tablespoons honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

Pinch of sea salt

Optional: shredded coconut and additional pineapple chunks for garnish

Begin by placing the pineapple chunks, coconut yogurt, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of sea salt into a high-speed blender. Blend on high until the mixture reaches a velvety smooth consistency.

    After blending, taste the mixture and determine if it meets your sweetness preference. If you desire a sweeter flavor, gradually add more honey or maple syrup and blend again until fully incorporated.

      For those who enjoy a bit of texture, you can incorporate some extra pineapple chunks or shredded coconut into the mixture at this stage, carefully stirring them in with a spatula.

        Evenly pour the blended mixture into popsicle molds, making sure to leave a small gap at the top of each mold to allow for the mixture to expand as it freezes.

          Insert the popsicle sticks into the molds, ensuring they are centered, and carefully transfer the molds to the freezer. Allow them to freeze for a minimum of 4 hours, or until they are completely solid.
