Ingredients

2 ripe mangoes, peeled and diced (approximately 2 cups)

1 cup plain Greek yogurt

1/2 cup coconut milk (or your preferred dairy-free milk)

1/4 cup honey (substitute with maple syrup for a vegan option)

Zest of 2 limes

Juice of 2 limes

1 teaspoon vanilla extract

A pinch of sea salt

Optional: Toasted coconut flakes and additional lime zest for garnish

Instructions

Prepare the Mangoes: Start by peeling and dicing the ripe mangoes into small, even pieces. Set aside to ensure you have a total of about 2 cups of diced mango for the next steps.

Blend the Mixture: In a blender or food processor, combine the diced mango with the Greek yogurt, coconut milk, honey (or maple syrup), lime zest, lime juice, vanilla extract, and a pinch of sea salt. Blend until the mixture is smooth and creamy. Take a moment to taste the mixture and, if you prefer it sweeter, adjust the sweetness according to your preference!

Set Up the Pan: Prepare your baking dish or shallow pan (around 9x9 inches in size) by lining it with parchment paper. Make sure to leave some overhang; this will help you easily lift out the frozen yogurt slices later.

Pour and Spread: Gently pour the mango yogurt mixture into the prepared baking dish. Use a spatula to spread it out evenly, ensuring the mixture reaches all corners of the dish.

Freeze: Carefully place the dish in the freezer, allowing it to freeze for a minimum of 4 to 6 hours, or until it becomes solid.

Cut into Slices: After freezing, take the dish out of the freezer. Grasp the overhanging parchment paper to lift the frozen yogurt slab out of the pan and transfer it to a cutting board. Use a sharp knife to cut it into slices of your preferred size (squares or rectangles work beautifully).

Serve and Enjoy: For extra flair, sprinkle toasted coconut flakes and a bit of fresh lime zest over the slices before serving. Dive into the tropical flavors right away, or store any leftover slices in an airtight container in the freezer for a refreshing treat later.
