Ingredients

2 ripe mangoes, peeled and diced into small cubes

1 cup full-fat coconut milk (for a rich creamy texture)

1/2 cup granulated sugar (adjust according to your sweetness preference)

1/2 cup shredded unsweetened coconut

1 tablespoon freshly squeezed lime juice (for a burst of flavor)

1 teaspoon pure vanilla extract

A pinch of salt (to enhance flavors)

Optional: fresh mango slices and toasted coconut flakes for garnish

Instructions

Blend the Mango: Place the diced mangoes, coconut milk, sugar, lime juice, vanilla extract, and a pinch of salt into a blender. Blend on high until the mixture is completely smooth and creamy. Taste the mixture and if desired, adjust the sweetness by adding more sugar.

Incorporate Shredded Coconut: Transfer the blended mango mixture to a mixing bowl. Gently fold in the shredded unsweetened coconut using a spatula or wooden spoon until it is evenly mixed throughout the batter.

Prepare the Mold: Line an ice cube tray, silicone molds, or an 8x8 inch (20x20 cm) baking dish with plastic wrap or parchment paper. This will aid in easy removal of the bars once frozen.

Pour the Mixture: Carefully pour the mango-coconut mixture into the prepared tray or molds, ensuring an even distribution. If using a baking dish, use a spatula to smooth the top and ensure an even surface.

Freeze: Cover the tray or baking dish tightly with plastic wrap. Place it in the freezer and allow the mixture to freeze for a minimum of 4 hours, or until it is completely frozen and solid.

Cut and Serve: Once fully frozen, if using a baking dish, lift the entire frozen block out by pulling on the parchment or plastic wrap. Cut into bars or squares using a sharp knife. If using silicone molds, simply pop the bars out gently.

Garnish (Optional): Before serving, enhance your bars with fresh mango slices layered on top and a sprinkle of toasted coconut flakes for an added crunch and visual appeal.

Enjoy: These delightful mango coconut bars are a refreshing treat, perfect for hot summer days or whenever you crave something fruity and indulgent!
