Ingredients

1 cup plain Greek yogurt

1/4 cup honey or maple syrup

1/2 cup fresh lemon juice (approximately 2-3 lemons)

Zest of one lemon

1/4 cup chia seeds

1 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Mixture: In a large mixing bowl, add the Greek yogurt, then drizzle in the honey (or maple syrup) and the fresh lemon juice. Sprinkle in the lemon zest, vanilla extract, and a pinch of salt. Whisk all the ingredients together until the mixture is smooth and well combined.

Incorporate Chia Seeds: Gently fold in the chia seeds using a spatula or wooden spoon, ensuring they are evenly distributed throughout the yogurt mixture. This will provide a delightful texture to your bites.

Prepare the Tray or Mold: Take a mini muffin tray or a silicone mold and line it with parchment paper for easy removal of the bites, or lightly grease it with cooking spray to facilitate release after freezing.

Fill the Tray: Using a spoon, carefully fill each compartment of the tray or mold with the lemon yogurt mixture, making sure to fill them about three-quarters full to allow for expansion during freezing.

Smooth the Surface: With the back of a spoon or a small spatula, smooth out the tops of each filled compartment to achieve an even finish, ensuring a professional look.

Freeze: Cover the tray or mold securely with plastic wrap or a lid to prevent freezer odors from affecting the bites. Place the tray in the freezer and allow it to freeze for a minimum of 4-6 hours, or until completely firm.

Remove from Mold: Once frozen solid, gently remove the bites from the mold. If using a mini muffin tray, press lightly on the bottom of each compartment to pop out the yogurt bites without any hassle.

Storage: Store the frozen lemon yogurt bites in an airtight container or a resealable freezer bag. To prevent sticking, consider placing parchment paper between layers if stacking.

Serving Suggestions: Enjoy these zesty, refreshing bites directly from the freezer for an invigorating treat, or let them sit at room temperature for a few minutes for a softer, creamier texture.
