2 cups plain Greek yogurt

1 cup brewed espresso or strong coffee (cooled to room temperature)

1/2 cup milk (choose between dairy or non-dairy)

1/4 cup honey or maple syrup (adjust according to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of sea salt

Optional: chocolate shavings or finely chopped nuts for garnish

Prepare the Coffee Base: In a medium mixing bowl, whisk together the cooled brewed espresso (or coffee) and milk until they are well combined. Ensure the coffee has cooled to room temperature; this step is crucial to prevent the yogurt from melting upon mixing.

    Mix the Yogurt: In a large bowl, add the Greek yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, and a pinch of sea salt. Using a whisk or an electric mixer at low speed, blend the ingredients until the mixture is smooth and creamy with a luscious texture.

      Combine the Mixtures: Slowly fold the coffee mixture into the yogurt mixture using a spatula. Combine gently until you achieve a uniform consistency, taking care to preserve some of the creamy yogurt swirls for visual appeal.

        Pour into Molds: Carefully pour or spoon the mixture into popsicle molds, ensuring to leave about half an inch of space at the top of each mold to allow for expansion when freezing.
