Ingredients

2 cups of fresh strawberries, hulled and sliced

2 cups of fresh pineapple chunks

1 cup of blueberries

1 cup of kiwi, peeled and diced

1 banana, sliced

1 cup of coconut water or fruit juice (such as orange or pineapple)

1 tablespoon of honey or maple syrup (optional, adjust according to your sweetness preference)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Fruit: In a spacious mixing bowl, combine the sliced strawberries, pineapple chunks, blueberries, diced kiwi, and sliced banana. Gently toss the fruits together to ensure they are evenly mixed without mashing them.

Sweeten the Mix: In a small bowl, whisk together the coconut water or chosen fruit juice with the honey or maple syrup until thoroughly blended. Once combined, pour this sweetened liquid over the fruit mixture in the large bowl. Carefully toss the fruits again to ensure they are evenly coated in the sweet mixture.

Fill the Cups: Grab small paper or silicone cups, approximately 3-4 ounces in size. Using a spoon or scooper, fill each cup with a generous portion of the fruit mixture, ensuring to leave a small amount of space at the top of each cup to accommodate the expansion as they freeze.

Freeze: Arrange the filled cups in the freezer, making sure they are stable and upright. Allow them to freeze for about 3-4 hours, or until they are completely solid.

Serve: After freezing, remove the cups from the freezer and let them sit out at room temperature for a few minutes to soften slightly for easier consumption. If necessary, run a warm knife around the edges of the cups to help release the frozen fruit cups.

Garnish and Enjoy: Before serving, garnish each cup with a few fresh mint leaves for a touch of color and flavor. Serve immediately as a refreshing dessert or snack, relishing the delightful burst of fruity flavors!
