Ingredients

4 ripe kiwis, peeled and sliced into 1/2-inch thick rounds

1 cup dark chocolate chips (substitute with milk chocolate if desired)

1 tablespoon coconut oil (optional, for added smoothness in melting)

1/4 cup crushed nuts (such as almonds, pistachios, or your favorite)

1/4 cup unsweetened shredded coconut

Popsicle sticks or small wooden skewers

Instructions

Prep the Kiwis: Begin by carefully peeling the kiwis. Slice them into thick rounds approximately 1/2-inch in thickness. This thickness is essential to ensure the slices hold their shape when frozen.

Melt the Chocolate: In a medium microwave-safe bowl, combine the chocolate chips and optional coconut oil. Heat in the microwave in 30-second intervals, stirring well after each interval, until the mixture is completely melted and has a silky-smooth consistency.

Dip the Kiwis: Take one kiwi slice at a time and dip it halfway into the melted chocolate, allowing any excess chocolate to drip back into the bowl. You can utilize a fork or skewer to stabilize the kiwi for easy dipping.

Add Toppings: After dipping in chocolate, quickly sprinkle the crushed nuts and shredded coconut over the chocolate-covered portion of the kiwi slice. Press down gently to ensure the toppings stick firmly.

Insert Sticks: Gently insert a popsicle stick or wooden skewer into the bottom of each kiwi slice, being cautious not to push it through the top.

Freeze: Line a baking sheet with parchment paper and place the kiwi pops on it, ensuring a bit of space between each. Freeze for a minimum of 2 hours, or until they are thoroughly solid.

Serve: Once the pops are frozen, lift them off the parchment paper and enjoy immediately, or store in an airtight container in the freezer where they can last up to a week.
