Ingredients

2 cups fresh or frozen blueberries

1 cup plain Greek yogurt (or your preferred yogurt variety)

1/2 cup honey or maple syrup (adjust according to your desired sweetness)

Zest of 1 lemon

1/4 cup fresh lemon juice (approximately the juice from 2 medium lemons)

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: 1/2 cup granola or crushed nuts for topping

Instructions

Prepare the Blueberries:

    - If using fresh blueberries, rinse them thoroughly under cool water and set them aside to drain.

      - If using frozen blueberries, allow them to thaw slightly at room temperature, and then drain off any excess water to prevent sogginess.

        Blend the Yogurt Mixture:

          - In a blender or food processor, add the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and salt.

            - Blend the ingredients together until you achieve a smooth and creamy texture.

              Mix in Blueberries:

                - Gently pour the blueberries into the yogurt mixture and fold them in using a spatula.

                  - For a beautiful marbled appearance, mash a few blueberries lightly while still leaving some whole for delightful bursts of flavor and texture.

                    Line the Pan:

                      - Prepare an 8x8-inch baking dish by lining it with parchment paper, leaving some overhang on the sides. This will help with easy removal after freezing.

                        Pour Mixture into Pan:

                          - Transfer the yogurt and blueberry mixture into the lined baking dish, spreading it out evenly.

                            - Use a spatula to smooth the top. If desired, sprinkle granola or crushed nuts evenly over the surface for an added crunch and flavor boost.

                              Freeze:

                                - Place the baking dish in the freezer, allowing the mixture to freeze for at least 4-6 hours, or until it is fully firm and set.

                                  Cut into Bars:

                                    - Once the mixture is frozen solid, carefully lift the yogurt block out of the pan using the parchment paper.

                                      - With a sharp knife, cut the block into squares or bars, wiping the knife between each cut for clean, precise edges.

                                        Serve & Store:

                                          - Enjoy the bars right away or store them in an airtight container in the freezer for up to one month.

                                            - For easier enjoyment, let the bars sit at room temperature for a few minutes before serving, allowing them to soften slightly.

Prep Time: 15 minutes | Total Time: 6-6.5 hours (includes freezing time) | Servings: 12 bars
