4 boneless, skinless chicken thighs

2 medium onions, thinly sliced

3 cloves garlic, minced

1 cup beef broth

1 cup shredded Swiss cheese

2 tablespoons balsamic vinegar

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Begin by seasoning the chicken thighs evenly with salt, black pepper, and fresh thyme or dried thyme. Place them aside for the flavors to meld.

    Sauté the Onions: In a large skillet, pour in the olive oil and warm over medium heat. Once hot, add the thinly sliced onions. Sauté, stirring occasionally for about 10-15 minutes, until the onions are beautifully caramelized and have turned a rich, golden brown.

      Add Garlic: Incorporate the minced garlic into the skillet with the onions, stirring for an additional minute or so, until the garlic is fragrant and lightly golden.

        Deglaze the Pan: Pour the balsamic vinegar into the skillet, using a spatula to scrape the bottom and deglaze the pan, releasing any tasty browned bits that have stuck. Allow this mixture to cook for an additional 2 minutes to enhance the flavor.

          Add the Chicken: Create space by pushing the onion mixture to one side of the skillet. Place the seasoned chicken thighs in the center and sear them for about 4-5 minutes on each side, until their exterior is golden brown.

            Simmer: Carefully pour in the beef broth, and increase the heat to bring the mixture to a gentle boil.
