Ingredients

1 pound (450g) baby carrots (or substitute with regular carrots, cut into 2-inch pieces)

2 tablespoons harissa paste (adjust according to your spice tolerance)

2 tablespoons extra virgin olive oil

1 teaspoon honey (or substitute with maple syrup for a vegan option)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

Juice of 1 large lemon

Fresh cilantro or parsley, chopped for garnish (optional)

Crumbled feta cheese for topping (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To simplify cleanup, line a baking sheet with parchment paper.

Prepare the Carrots: If you’re using regular carrots, peel them thoroughly and slice them into 2-inch pieces. If opting for baby carrots, leave them whole. Place all the carrots in a large mixing bowl.

Make the Harissa Marinade: In a small mixing bowl, combine harissa paste, olive oil, honey (or maple syrup), ground cumin, smoked paprika, sea salt, black pepper, and freshly squeezed lemon juice. Whisk the ingredients together until they form a smooth marinade. Feel free to alter the amount of harissa to suit your heat preference.

Combine: Pour the harissa marinade over the prepared carrots and toss vigorously to ensure every piece is thoroughly coated in the flavorful mixture.

Roast the Carrots: Arrange the marinated carrots in a single layer on the lined baking sheet. Roast them in the preheated oven for 25-30 minutes. Halfway through the cooking time, stir or turn the carrots to promote even caramelization. Look for tenderness and that beautiful caramelized color as indicators of doneness.

Serve: Once roasted, carefully remove the carrots from the oven. Transfer them to a decorative serving platter. Garnish with chopped fresh cilantro or parsley for a pop of color, and sprinkle with crumbled feta cheese if desired for an added layer of flavor.

Enjoy: Serve these spicy roasted carrots warm, either as a standout side dish or a vibrant topping for salads and grain bowls!
