Ingredients

20 jumbo pasta shells

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional for heat)

1 jar (24 oz) marinara sauce

1 tablespoon olive oil

Salt and black pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) so it’s hot and ready for baking.

Cook the Pasta Shells: Boil a large pot of salted water. Once boiling, carefully add the jumbo pasta shells and cook until they are al dente, following the package instructions (typically about 10-12 minutes). Once cooked, drain the shells and rinse them gently under cold water to stop the cooking process. Set them aside on a clean kitchen towel to cool.

Prepare the Turkey Mixture: In a large skillet, heat olive oil over medium heat. Add the ground turkey, seasoning it with salt, black pepper, garlic powder, onion powder, and optional red pepper flakes. Brown the turkey, cooking until it’s fully cooked through, about 5-7 minutes.

Incorporate Spinach: Introduce the chopped spinach to the skillet. Sauté everything together for an additional 2-3 minutes, or until the spinach is wilted and mixed well with the turkey. Remove from heat, allowing the mixture to cool slightly.

Mix the Filling: In a large mixing bowl, combine the turkey and spinach mixture with ricotta cheese, half of the shredded mozzarella, and grated Parmesan cheese. Stir thoroughly until all ingredients are evenly mixed.

Stuff the Shells: Spread half of the marinara sauce across the bottom of a 9x13 inch baking dish. Carefully fill each jumbo pasta shell with the turkey and spinach stuffing, placing them seam side up in the dish. Once all shells are filled, pour the remaining marinara sauce evenly over the top.

Top with Cheese: Evenly sprinkle the remaining mozzarella cheese atop the stuffed shells for a delicious cheesy crust.

Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted, bubbly, and beginning to turn golden brown.

Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve hot and savor the delightful flavors of your stuffed shells!
