1 lb boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces

1 cup long-grain white rice

2 cups water or chicken broth

1/4 cup soy sauce

1/4 cup mirin (Japanese sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece of ginger, finely grated

1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)

1 cup broccoli florets

1 carrot, thinly sliced

1/2 bell pepper, any color, sliced

Sesame seeds for garnish

Sliced green onions for garnish

Salt and freshly ground black pepper, to taste

Instructions
 

Cook the Rice: In a medium saucepan, combine the long-grain rice and either water or chicken broth. Bring the mixture to a vigorous boil over medium-high heat. Once boiling, reduce the heat to low, cover with a lid, and let it simmer undisturbed for about 15-20 minutes, or until the rice is tender and all the liquid has been absorbed. Fluff the rice with a fork, cover again, and set it aside.

    Prepare the Teriyaki Sauce: In a small mixing bowl, vigorously whisk together the soy sauce, mirin, brown sugar, minced garlic, grated ginger, and sesame oil until the ingredients are well combined. Set the sauce aside to allow the flavors to meld.

      Cook the Chicken: In a large skillet or wok, heat a tablespoon of cooking oil over medium-high heat. Add the bite-sized pieces of chicken to the skillet, seasoning them with a sprinkle of salt and freshly ground black pepper. Sauté the chicken for about 5-7 minutes, or until it’s golden brown and cooked through, stirring occasionally for even cooking.

        Add Vegetables: To the skillet with the cooked chicken, add the broccoli florets, thinly sliced carrot, and bell pepper. Stir-fry the mixture for 3-4 minutes, or until the vegetables are vibrant and tender-crisp.
