8 oz large shrimp, peeled and deveined

8 rice paper wrappers

1 cup vermicelli noodles, cooked and chilled

1 cup crisp lettuce leaves (such as romaine or butter lettuce)

1 cup fresh herbs (a mix of mint, cilantro, and basil for a fragrant touch)

1 medium carrot, peeled and julienned

1 small cucumber, peeled and julienned

1/4 cup sliced bell peppers (opt for vibrant red or yellow for added color)

1 ripe avocado, sliced

Salt and freshly ground black pepper, to taste

For the Dipping Sauce:

1/4 cup hoisin sauce

1 tablespoon creamy peanut butter

1 tablespoon freshly squeezed lime juice

1 tablespoon water (add more if needed for desired thickness)

Chopped peanuts, for garnish (optional)

Cook the Shrimp: In a medium saucepan, bring water to a gentle boil. Add the shrimp and cook for 2-3 minutes, or until they are pink and opaque throughout. Remove from heat, drain, and let cool. Once cooled, season with a sprinkle of salt and pepper to enhance flavor.

    Prepare the Noodles: Cook the vermicelli noodles according to the package instructions. Once done, drain and rinse them under cold water to prevent sticking, then set aside to cool completely.

      Prep the Vegetables: While the shrimp cools, prepare your crunchy vegetables. Julienne the carrots and cucumber, cut the bell pepper into thin strips, and slice the avocado into thin wedges.

        Make the Dipping Sauce: In a small mixing bowl, combine the hoisin sauce, creamy peanut butter, lime juice, and water. Whisk together until smooth. Adjust the consistency by adding more water if desired. If you like, sprinkle chopped peanuts on top for added crunch.
