1 lb large shrimp, peeled and deveined

2 tablespoons vegetable oil

1 cup mixed vegetables (such as carrots, peas, corn, and bell peppers)

3 green onions, finely chopped

2 cloves garlic, minced

2 large eggs, beaten

3 tablespoons soy sauce (or tamari for gluten-free option)

1 tablespoon oyster sauce (optional)

Salt and black pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear to remove excess starch. Cook the rice according to the package directions. For the best texture, allow the rice to cool completely before using. For fried rice, day-old rice is ideal as it’s less sticky, but if using fresh rice, spread it out on a baking sheet to cool quickly.

    Prepare the Shrimp: Season the peeled and deveined shrimp with salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for about 2-3 minutes, stirring occasionally, until they turn pink and opaque. Once cooked, remove the shrimp from the skillet and set them aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. Next, add the mixed vegetables to the skillet and stir-fry for approximately 3-4 minutes, or until they are just tender but still crisp.
