1 lb large shrimp, peeled and deveined

1 cup jasmine rice (or your preferred rice variety)

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cucumber, finely diced

1/4 cup red onion, finely chopped

2 tablespoons extra virgin olive oil

1 tablespoon fresh lime juice

1 teaspoon chili powder

Salt and freshly cracked black pepper, to taste

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions
 

Cook the Rice: Begin by rinsing the jasmine rice under cold water until the water runs clear, removing excess starch. In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for approximately 15 minutes, or until the rice is tender and all the water has been absorbed. Once cooked, remove from heat and fluff the rice gently with a fork.

    Prepare the Shrimp: While the rice cooks, heat the extra virgin olive oil in a large skillet over medium heat. In a mixing bowl, toss the peeled and deveined shrimp with chili powder, salt, and freshly cracked black pepper to ensure they are evenly coated. When the skillet is sufficiently heated, carefully add the shrimp. Cook the shrimp for 2-3 minutes on each side, or until they are pink and opaque, indicating they are fully cooked.

      Mix the Salad Ingredients: In a large mixing bowl, combine the diced avocados, halved cherry tomatoes, diced cucumber, and finely chopped red onion. Drizzle the mixture with fresh lime juice, and season with salt and pepper to taste. Gently toss the ingredients together, taking care not to mash the avocados, until all the flavors are well combined.

        Assemble the Bowls: To serve, take your serving bowls and place a generous scoop of cooked jasmine rice at the bottom of each. Layer the sautéed shrimp on top of the rice, followed by a portion of the vibrant avocado salad mixture.
