Ingredients

12 oz (340g) penne pasta

2 cups marinara sauce (store-bought or homemade)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1/2 tsp dried oregano

1/2 tsp garlic powder

Salt and pepper to taste

Fresh basil leaves, for garnish

1 tbsp olive oil

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it’s hot when you’re ready to bake the pasta.

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until it's al dente, which typically takes about 8-10 minutes. Once cooked, drain the pasta in a colander and set it aside.

Prepare the Sauce Mixture: In a large mixing bowl, combine the marinara sauce and ricotta cheese. Sprinkle in the dried oregano, garlic powder, and a pinch of salt and pepper. Stir everything together until the mixture is smooth and well combined.

Add Vegetables: Gently fold in the halved cherry tomatoes and diced zucchini into the sauce mixture, ensuring they are evenly distributed.

Combine Pasta and Sauce: In the same pot used for boiling the pasta, return the drained penne to the pot. Pour the sauce and vegetable mixture over the pasta. Toss everything together until the pasta is thoroughly coated in the creamy sauce.

Layer the Bake: Lightly grease a 9x13 inch baking dish with olive oil to prevent sticking. Pour half of the pasta mixture into the dish, spreading it out evenly. Sprinkle half of the shredded mozzarella and half of the grated Parmesan cheese on top of this first layer. Add the remaining pasta mixture on top in an even layer.

Top with Cheese: Generously sprinkle the remaining mozzarella and Parmesan cheeses over the top layer of pasta for that delightful cheesy finish.

Bake: Cover the baking dish with aluminum foil to keep moisture in while it bakes. Place it in the preheated oven and bake for 20 minutes. After that, carefully remove the foil and bake for an additional 15 minutes, or until the cheese on top is bubbly and lightly golden.

Garnish and Serve: Once baked, take the dish out of the oven and let it cool for a few minutes to firm up. Just before serving, garnish with fresh basil leaves, adding a touch of color and freshness.

Prep Time: 20 mins | Total Time: 55 mins | Servings: 6 servings

                      - Presentation Tips: Serve the pasta bake hot directly from the baking dish. Accompany with a simple green salad and crusty bread for a complete meal. A drizzle of balsamic reduction can also enhance the plating and flavor.
