4 whole-wheat tortillas (8-inch size)

1 tablespoon olive oil

Instructions
 

Prepare the Vegetables: In a medium mixing bowl, combine the chopped spinach, diced bell pepper, finely chopped onion, and halved cherry tomatoes. Toss gently to combine, then set aside.

    Whisk the Eggs: In a separate bowl, crack the eggs and whisk them vigorously until they are well mixed and slightly frothy. Season with a pinch of salt and pepper to enhance the flavor.

      Sauté the Vegetables: Heat the olive oil in a medium skillet over medium heat. Once hot, add the chopped onion and diced bell pepper. Sauté for about 3-4 minutes, stirring often, until the vegetables are softened. Then, add the spinach and cherry tomatoes to the skillet, cooking for an additional 2-3 minutes until the spinach has wilted.

        Incorporate the Eggs: Pour the whisked eggs over the sautéed vegetables in the skillet. Gently stir the mixture while it cooks for approximately 3-5 minutes, or until the eggs are fully scrambled and cooked through.
