1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 medium onion, sliced into thin rings

2 cups cooked brown rice (or substitute with white rice)

1 cup corn (fresh, frozen, or canned)

1 can (15 oz) black beans, rinsed and drained

1/2 cup shredded cheese (cheddar or a Mexican blend for added flavor)

1/4 cup fresh cilantro, chopped (optional for garnish)

Lime wedges, for serving
