Ingredients

8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, sliced into strips

2 cups fresh broccoli florets

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta and Broccoli: In a large pot, bring a generous amount of salted water to a rolling boil. Add the fettuccine pasta and cook according to the package instructions until al dente. For the final 3 minutes of cooking time, add the broccoli florets to the pot. This will allow them to cook evenly and retain their vibrant color. Once cooked, drain the pasta and broccoli together and set them aside.

Sauté the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. While the oil heats, season the sliced chicken strips with salt and pepper for enhanced flavor. Once the skillet is hot, add the chicken. Cook for about 5-7 minutes or until the chicken is golden brown and fully cooked through. Use a meat thermometer to ensure it reaches an internal temperature of 165°F (75°C). After cooking, remove the chicken from the skillet and set it aside on a plate.

Prepare the Alfredo Sauce: In the same skillet that you used for the chicken, add the remaining tablespoon of olive oil. Allow it to heat briefly, then add the minced garlic. Sauté the garlic for about 30 seconds until it becomes fragrant, taking care not to let it burn. Next, pour in the heavy cream and bring the mixture to a gentle simmer, stirring continuously.

Incorporate Cheese: Gradually stir in the grated Parmesan cheese. Keep stirring until the cheese melts completely and the sauce thickens to a creamy consistency. If the sauce becomes too thick, you can add a splash of the reserved pasta water to adjust its texture to your liking.

Combine Ingredients: Add the cooked chicken, fettuccine, and broccoli back into the skillet with the Alfredo sauce. Gently toss everything together until well coated with the creamy sauce. Taste and adjust seasoning with additional salt and pepper if necessary.

Serve: Plate the creamy chicken Alfredo with broccoli on warm serving dishes. Garnish each plate with freshly chopped parsley for a bright and fresh touch. For extra flavor, feel free to sprinkle additional Parmesan cheese on top. Serve immediately while hot.
