Easy Cheesy Lasagna Roll-Ups

8 large lasagna noodles

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

1 tablespoon Italian seasoning

Salt and pepper, to taste

Fresh basil or parsley, chopped (for garnish, optional)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a rolling boil. Carefully add the lasagna noodles and cook according to package instructions until al dente. Once cooked, drain the noodles and spread them out flat on a clean kitchen towel to cool and prevent sticking.

    Prepare the Cheese Filling: In a medium mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan cheese, the egg, Italian seasoning, salt, and pepper. Stir thoroughly until the mixture is creamy and all ingredients are well incorporated.

      Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). Spread a generous thin layer of marinara sauce along the bottom of a 9x13-inch baking dish. Take one cooled lasagna noodle and spread approximately 2-3 tablespoons of the cheese mixture evenly along its length. Carefully roll the noodle from one end to the other, securing the filling inside.

        Arrange in the Baking Dish: Place each rolled noodle in the baking dish, seam-side down, ensuring they are snugly fit without overcrowding. Continue this process until all noodles and cheese mixture have been used. Pour the remaining marinara sauce evenly over the tops of the roll-ups, ensuring each is coated generously.
