1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with their juice)

1 small onion, finely diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1-2 cups beef broth (adjust according to your thickness preference)

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, and/or diced avocado

Instructions
 

Sauté the Beef: In a large pot or Dutch oven, warm 1 tablespoon of olive oil over medium-high heat. Add the ground beef to the pot, breaking it up with a wooden spoon as it cooks. Sauté for approximately 5 minutes or until the beef is completely browned and no longer pink.

    Add Vegetables: Stir in the diced onion, minced garlic, and diced bell pepper. Cook this mixture for about 3 minutes or until the vegetables start to soften, stirring occasionally to prevent burning.
