Ingredients

8 oz (225g) white chocolate, chopped

2 cups (480ml) heavy whipping cream, divided

3 large egg whites

1/4 cup (50g) granulated sugar

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh berries or mint for garnish

Instructions

Melt the White Chocolate: Begin by placing the chopped white chocolate in a heatproof bowl. Set this bowl over a pot of simmering water (using the double boiler method) and stir continuously until the chocolate is fully melted and smooth. Once melted, remove it from the heat and allow it to cool slightly.

Whip the Cream: In a large mixing bowl, pour in 1 1/2 cups (360ml) of the heavy whipping cream. Using an electric mixer, beat on medium-high speed until soft peaks form. Once whipped, gently fold in the melted white chocolate using a spatula, taking care not to deflate the airy texture of the cream.

Whisk the Egg Whites: In a separate clean bowl, add the egg whites along with a pinch of salt. Beat the egg whites using a mixer on medium speed until soft peaks begin to form. Gradually add the granulated sugar while continuing to beat, until stiff peaks are achieved. This step is key to giving the mousse its light and airy texture.

Combine Everything: Carefully fold the whipped egg whites into the white chocolate mixture in three additions. Use a gentle folding motion to ensure that the mixture is well combined, retaining as much air as possible for a fluffy consistency.

Chill the Mousse: Spoon the mousse into individual serving dishes or elegant glasses. Cover each one with plastic wrap and refrigerate for at least 4 hours, or until the mousse has fully set.

Prepare to Serve: Just before serving, whip the remaining 1/2 cup (120ml) of heavy cream to soft peaks. Spoon this freshly whipped cream over the chilled mousse. For an extra touch of elegance, garnish with fresh berries or a sprig of mint.

Enjoy: Serve the mousse chilled and indulge in the luscious, creamy texture of your delightful dreamy white chocolate mousse!
