Ingredients

8 oz (225g) high-quality dark chocolate (70% cocoa or more), chopped

1/2 cup (115g) unsalted butter, cut into small pieces

3/4 cup (150g) granulated sugar

1/4 teaspoon fine sea salt

1 teaspoon pure vanilla extract

4 large eggs, at room temperature

1/2 cup (50g) unsweetened cocoa powder, sifted

Optional: Confectioners' sugar for dusting, fresh berries, and whipped cream for serving

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Grease an 8-inch (20cm) round cake pan with butter, ensuring to coat the sides thoroughly. To facilitate easy cake removal, line the bottom of the pan with a circle of parchment paper.

Melt the Chocolate and Butter: In a medium heatproof bowl, combine the chopped dark chocolate and butter. Set this bowl over a saucepan filled with gently simmering water (this creates a double boiler). Stir the mixture occasionally until both the chocolate and butter are completely melted and smooth. Afterward, remove it from the heat and allow it to cool slightly.

Whisk in Sugar, Salt, and Vanilla: Once the chocolate mixture has cooled down a bit (but still warm), whisk in the granulated sugar, fine sea salt, and pure vanilla extract until well combined and smooth.

Incorporate the Eggs: Add the eggs to the chocolate mixture, one at a time, ensuring to mix thoroughly after each addition. Continue mixing until the batter becomes glossy and smooth, indicating that it’s well blended.

Fold in Cocoa Powder: Gently fold in the sifted cocoa powder using a spatula. Be careful not to overmix; you want to maintain the thick and rich texture of the batter without adding too much air.

Bake the Cake: Pour the rich batter into the prepared cake pan, smoothing the top with a spatula to create an even surface. Place it in the preheated oven and bake for 25-30 minutes. The cake is done when the top looks set, and a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).

Cool the Cake: After baking, allow the cake to cool in the pan for about 10 minutes. Run a knife gently along the edges to loosen the cake, then invert it onto a wire rack to cool completely. Carefully remove the parchment paper from the bottom.

Serve: Once the cake has cooled down, dust it lightly with confectioners' sugar for an elegant finish. Serve slices alongside fresh berries and a dollop of whipped cream for an extra touch of indulgence.

                  Prep Time: 15 minutes | Total Time: 1 hour | Servings: 8-10

                    - Presentation Tips: For an added visual appeal, consider arranging fresh berries on the serving plate around each slice of cake, and pipe whipped cream in decorative swirls on top. Enjoy!
