Ingredients

1 cup jasmine rice

2 cups water

1 large cucumber, thinly sliced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 ripe avocado, sliced

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled

2 tablespoons sesame oil

1 tablespoon soy sauce or tamari

1 tablespoon rice vinegar

1 teaspoon honey or maple syrup

Sea salt and freshly ground black pepper to taste

1 tablespoon sesame seeds (optional)

Lime wedges for garnish

Instructions

Cook the Rice: In a medium saucepan, bring 2 cups of water to a rolling boil. Once boiling, add the jasmine rice. Reduce the heat to low, cover, and let it simmer for 15-18 minutes, or until the rice is tender and all the water has been absorbed. Once done, remove from heat and keep covered for an additional 5 minutes to allow it to steam. Fluff the rice gently with a fork to separate the grains.

Prep the Cucumber: While the rice is cooking, thinly slice the cucumber. For added flavor and texture, you can sprinkle the slices with a pinch of sea salt and let them rest for about 10 minutes. This step will help draw out excess moisture, making the cucumber crispier.

Mix the Dressing: In a small mixing bowl, combine the sesame oil, soy sauce (or tamari), rice vinegar, and honey (or maple syrup). Whisk the mixture until well combined. Taste and adjust seasoning with salt and pepper according to your preference.

Assemble the Bowl: In a large serving bowl, create a base with the fluffy jasmine rice. Artfully arrange the sliced cucumber, halved cherry tomatoes, finely chopped red onion, and avocado slices on top of the rice.

Drizzle Dressing: Take the dressing you prepared earlier and evenly drizzle it over the vibrant layers in the bowl. Gently toss all the ingredients together, ensuring that each component is beautifully coated in the savory sauce.

Garnish and Serve: To finish, sprinkle the chopped cilantro and crumbled feta cheese generously over the bowl. If using, add sesame seeds for a delightful crunch. Serve with lime wedges on the side for an extra burst of citrus flavor that guests can squeeze over their bowls.
