Ingredients

2 large cucumbers

1 cup cream cheese, softened to room temperature

1/4 cup Greek yogurt

1 tablespoon fresh dill, finely chopped

1 tablespoon fresh chives, finely chopped

1 tablespoon freshly squeezed lemon juice

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1/4 cup cherry tomatoes, halved (for garnish)

Fresh herbs for garnish (optional, such as basil or cilantro)

Crushed black pepper or red pepper flakes (for added spice, optional)

Instructions

Prepare the Cucumbers: Begin by thoroughly washing the cucumbers under cold water to remove any dirt. Cut off the ends of each cucumber, then slice them into 1-inch thick rounds. Take a melon baller or a small teaspoon to carefully scoop out a small indentation from the center of each cucumber slice, creating a well to hold the filling.

Make the Filling: In a mixing bowl, combine the softened cream cheese and Greek yogurt. Add in the finely chopped dill, chopped chives, fresh lemon juice, garlic powder, and a pinch of salt and pepper. Mix all the ingredients together using a spatula or electric mixer until the mixture is completely smooth and creamy. Taste the filling and adjust the seasoning according to your preference.

Fill the Cucumber Rounds: Once the filling is ready, transfer it into a piping bag fitted with a decorative tip, or use a small spoon for filling. Carefully pipe or spoon the herbed cream cheese mixture into each cucumber round, allowing it to slightly overflow to create an inviting mound on top.

Garnish: Place a cherry tomato half on top of each filled cucumber bite, gently pressing it down so it adheres to the cream cheese filling. If you like a bit of heat, sprinkle a dash of crushed black pepper or red pepper flakes on top for an extra kick.

Chill and Serve: Arrange the cucumber bites on a beautiful serving platter and cover them with plastic wrap. Refrigerate for at least 30 minutes before serving to allow all the flavors to meld together. If desired, add a sprinkle of fresh herbs over the top for an elegant finish. Serve these delightful cucumber bites chilled for a refreshing appetizer.
